450g cherry or grape tomatoes, halved
1 lemon, juiced
285g instant couscous
2 wide strips lemon zest
30g roughly chopped flat leaf parsley, stems saved
70g toasted pine nuts, optional
2 cucumbers, seeded, and diced
3 tsp salt
4 tbsp extra-virgin olive oil
15g torn mint leaves, stems saved
3 spring onions (white and green), chopped

1) At first toss the tomatoes, lemon juice and cucumbers in a bowl through 2 tsp of the salt. Put aside.
2) Set the couscous into a big bowl. Take the water, 3 tbsp of the oil, lemon zest, the remaining salt, cayenne & herb curtail to a boil over heat. Pour the juice over the couscous, mix to separate any bundles. Cover through a lid, plate, otherwise clingfilm, put aside for 6 min. Take out the zest & herb stems & down with a fork.
